Looking like a little goat cheese cupcake, Coupole is made with fresh goats’ milk that is pasteurized and then undergoes a slow 24 hour lactic fermentation. The fragile curd is then drained in cheesecloth overnight. On the third day, Coupole is hand shaped using a unique form to create a little dome. After a day in the drying room, the cheese is moved into the aging room to allow the geotrichum rind to develop. This gives the cheese an amazing, rich texture which is both fluffy and creamy. This cheese is grassy and lemony, with notes of toasted nuts and yeast. Perfect on a cheese platter alongside prosciutto and honeycomb.
