Using organic Jersey cow’s milk from the Camozzi family farm in Willow Creek, Big McKinley Cheddar is an ode to the classic British cheddars. Wrapped in muslin and slathered with lard, this cheese ages on wooden planks for a minimum of 12 months. The result is a dense, crumbly cheese with subtle notes of tropical fruit, fresh grass, and tempered acidity. Pair with an IPA.
