Made from milk from the David Vera Dairy in Lemoore, California, young wheels are washed in brine for the first two weeks of aging and lightly pressed to encourage a rich texture. Its soft creamline gives way to a springy interior, and its paste is sweet with flavors of yeast and an aroma of grilled meat.
