A blend between a cheddar and a young gouda, it has a semi-firm, slightly crumbly yet smooth texture with a thin rind. The goat's milk lends it a pleasant tanginess, while the cow's milk offers undertones of butter and caramel. A perfect breakfast cheese to melt on sourdough toast.
