This soft-ripened cheese has a fluffy, craggy exterior that leads way to a luscious, creamy, almost runny interior. It tastes like mushrooms, cream, and grass with a delightful tangy quality at the finish. As it gets older, the cheese becomes more vegetal and earthy, with a slightly sweet aroma. Sip on a pear cider while spreading this cheese on a sourdough boule.
