From there, two gouda producers use the milk to make wheels of young gouda. Then Betty and Martin Koster select wheels to age in their Amsterdam-based Fromagerie L’Amuse shop. Their Signature Gouda is aged for over 24-months, in a uniquely warm and humid environment. This aging treatment allows the cheese to develop a wonderful crumbly yet dense pate with pronounced freckles of salty crystal formations throughout. The flavor is robust and full - with notes of butterscotch, salted caramel and toasted hazelnuts. It is also a beautiful Dutch sunset orange color!
