Brother and sister duo, Ype and Janita Rispens convinced their parents that it was time to take steps to reduce their ecological footprint. As a result the Rispens family decided to raise sheep - a lower impact pasture animal - and use the milk to produce cheese. Add the magic of Betty Koster and the rest is history! Working with the family to develop the recipe, Betty has helped create and age this beautiful cheese. The rich sheep’s milk gives flavors of brown butter, toast, warm spices and roasted nuts. The texture is hard, but rich, with salt crystal structures throughout. Enjoy with a stout.
