Modeled after Raclette, which is classically melted and served with roasted potatoes and gherkins, Reading is a beautiful melting cheese. The interior paste has a smooth texture with flavors of butter, nuts and fresh cut grass. The washed rind gives it a slight funkiness and a wonderful depth of flavor that is perfect for snacking or cooking!
